WEMAC fermentation tank,the top of the tank is a round arch structure.
The central opening is used to place a detachable large-diameter flange to install CO2 and CIP pipes and their connectors.
The top of the tank is also equipped with sight glasses, anti-vacuum valves, overpressure valves and pressure sensors.
The tank is equipped with a washing device inside, and a platform and a channel for tank top operation are also installed.
The fermentation tank should be equipped with a high-pressure spray washing device,
and the spray washing pressure should be controlled at 0.39 to 0.49 MPa or higher.
Mashing is the most important process in the preparation of wort.
In the saccharification process, water is mixed with the mashed malt to dissolve the contents of the malt
to obtain an extract (all substances that enter the aqueous solution are called extracts).
WEMAC mash tun,the cylinder body of the tun has a thermometer, a liquid level gauge, etc.,
generally adopts the form of steam bottom heating or internal electric heating tube heating,
and the heat exchange area of the saccharification equipment is generally 0.7~ 1m2/m3.
In WEMAC fermentation tank,the ratio of the diameter to the height of the tank is usually 1: 2 to 1: 4,
and the total height is preferably not more than 16m, so as not to cause strong convection
and affect the sedimentation of yeast and coagulum. Cans can be made of stainless steel or carbon steel.
If carbon steel is used, the inner wall of the can must be coated with a non-toxic coating
that does not affect the taste of beer. The working pressure of the fermentation tank can be determined
according to the working nature of the tank. Generally, the working pressure of the fermentation tank
is controlled between 0.2 and 0.3 MPa. The inner wall of the tank must be smooth and flat,
the inner wall of the stainless steel tank must be polished,
and the coating of the inner wall of the carbon steel tank must be uniform,
with no uneven surface and no granular protrusions.
Ventilation and control of fermentation
The compressed air used in the fermentation process should be sterile air. The process of preparing sterile air
can refer to the following methods:
Compressed air → degreasing, water and debris → pre-filter → sterilization filter → key station sterilization filter → sterile air
If you need to use sterile CO2, the preparation method can refer to the following:
CO2 liquefaction storage tank → heating and gasification → pre-filter → sterilization filter →
gas separation point sterilization filter → sterile CO2.
