The upper part of the fermenter is cylindrical and the lower part is tapered.
This shape facilitates the collection of yeast at the bottom,
which allows the yeast to be smoothly and completely discharged,
and is advantageous for emptying the contents of the tank and cleaning the tank.
The fermenter is specially equipped with the following components:

3. Fermentation control and automation device
Of course, the fermenter cannot be fully filled during fermentation because the rising motion of CO2 forms a foam.
Not only the material used to make the fermenter is important, but the inner surface of the second stage can not be ignored.
The inner surface should be as flat as possible and there should be no gaps with the microscope.
The roughness depth can be reduced by suitable surface processing.
Especially at the tank and the tapered outlet,
the average roughness of the tank surface must be very small to prevent the growth of microorganisms.
This requirement also uses welds, which are now finely polished to prevent microbial production here.
The size of the fermenter depends on the saccharification capacity. In principle,
the capacity of the fermenter can only be equal to the saccharification capacity of the changing day
(only in special cases can be sized to match the capacity of the whole day).
The reasons are as follows:
1. The larger the fermenter, the longer the wort is filled, and the first pot of wort is already in the fermentation stage.
2. If the last pot of wort is not inoculated with yeast, the pot wort will stay in the state without yeast contact for a long time, at which time the mixing effect in the tank is very poor, thus causing pollution hazards.
3. The larger the fermenter, the longer the non-productive time for drinking, cleaning, and refilling.
4. Large fermenters are only suitable for mass production of the same major beer variety.
5. The peak value of large fermenter cooling is higher than that of multiple small fermenters.
