Purpose of mashing
a. The purpose of mashing is to form a large amount of high-quality extracts as much as possible,
and most extracts can only be produced by the action of enzymes during saccharification,
and the enzymes should function in their optimal temperature range.
b. Malt mashing is the process of gradually decomposing the insoluble high-molecular substances
in the malt and auxiliary materials of malt into soluble low-molecular substances under appropriate conditions
by using various hydrolases contained in the malt.
The shape of the fermenter: the cylindrical conical fermenter is the current general fermenter.
The main body of the tank is cylindrical. Cooling and holding device is a fully enclosed fermentation tank.
The cylindrical conical fermentation tank is suitable for both the bottom fermentation and the top fermentation.
The processing is very convenient.
The mashing heating is provided in a variety of ways including direct fire heating,
electric heating, and steam heating.
The saccharification auxiliary equipment mainly includes material-water mixer,
diversion pump, hot water tank, etc.
The saccharification pot is generally a cylindrical body, a ball bottom or a slightly conical (160 °) sandwich bottom,
an arc top cover (the cone angle is generally 120 ° when the upper cone is sealed), and the slurry is stirred.
There is a wave groove at the root of the exhaust pipe to collect the condensed water left by the pipe wall,
and then it is discharged out of the tun.
The tank itself has a cooling device to facilitate the control of the fermentation temperature.
The production is easy to control, the fermentation cycle is shortened, the chance of bacterial infection is small,
and the beer quality is stable.
There is a thermal insulation device outside the tank, which can be placed outdoors,
reducing construction investment, saving floor space and facilitating expansion.
